Vinyl Planks in a basement, need help with leveling for drains etc.

I am currently in the process of installing Vinyl Plank flooring in a basement in Michigan. The cement subfloor has been cleaned as much as possible and I am in the process of installing. I have run into an issue though. There are two spots for drainage in the basement with more drastic declines than is recommended on the packaging.

One is near the sump pump and it is drastic enough that at one and a half feet out the planks are far enough out of alignment that a few feet away standing I can see the gray tabs that snap together to hold the planking together. I have tried carving away at the edges of the planks to compensate but it is slow going and my last resort is to just let the planks fall where they may, fill it with an epoxy and color the epoxy after.

Any other suggestions for what I should do? I'm at my wits end since this project is taking longer than I planned and the internet has not been much help (since this is a pretty specific problem)
